This recipe will make 3-4 portions.

- 1 tbsp butter
- 1 tbsp olive oil
- 1 kg big shrimps
- 3 cloves garlic, minced
- 2 zucchini, diced
- 1/2 can corn
- 3/4 cup cherry tomatoes
- Handful basil leaves
- Shredded parmesan cheese
- Salt & Pepper
Melt the butter in a skillet. Add the shrimp and garlic, then saute for about 3 minutes. Remove the shrimp to a plate.
Increase the heat a bit, add olive oil (you can also use butter again instead of olive oil), then throw in the zucchini. Stir it around for few seconds, then move the zucchini to the edges of the pan. Throw in the corn (without water) and cook it for few seconds, then push it to the edges of the pan. Throw in the cherry tomatoes, stir them around for a minute, then sprinkle salt and pepper to taste.
Then throw the shrimps back in. Stir everything around for few seconds, or until it’s all combined and hot. Then place it onto serving plate.
Sprinkle on the fresh basil and Parmesan cheese. I suggest adding a little bit of fresh lemon juice on the top. It tastes then absolutely delicious and fresh!
